KATHERINE ROMER-LEE | FOOD AND BEVERAGE
As the Fox Browne Creative Food and Beverage curator, I develop food concepts, menus and guest experiences in the beautiful lodges and hotels that we design.
My food is wholesome, healthy, simple good food prepared with love. It is homely, heart-warming and belly-filling food made with the best seasonal produce;. I love the flavour of fire and earth cooking which connects us to the earth. I am continually learning from inspirational chefs such as Magnus Nilsson, Francis Mallmann, and Eric Werner and Yotam Ottolenghi.
Growing up in Lesotho, I learned many useful kitchen tricks from Mable, my mother – and still use some of her recipes today. As a Silwood trained chef, I had the privilege of working as Roald Dahl’s private chef, I set up the restaurant at Vergelegen in Boschendal and later partnered with Ken Forrester on 96 Winery Road. I was also a founding partner of Pomegranate, one of Cape Town’s most successful private catering businesses. As a former game ranger at Londolozi Private Game Reserve, I have a deep understanding of what it takes to work in remote locations serving luxury travellers.
Oaklands Country Manor is my home, where I manage a 32-bed country hotel with my family. My role among others includes feeding our guests every day with a talented kitchen team. I oversee training, sourcing gardening, recycling based on the permaculture principals. We only serve local fish, meat and poultry, home baked bread with farm butter and organic veggies from our garden. We are so proud to have won Best country style Eatery for 4 years running in the South African Eat Out Awards.
I am most proud of the versatility, creativity and discipline that cooking has taught me.
